Filleting Knife


Our knives are hand forged using traditional techniques and a coal fire. They are made from 5160 spring steel which a high carbon steel that has been used for making knives for a very long time. We choose this type of steel because it is forgiving and easy to sharpen. This authentic style knife does need looking after. No dishwashers!

This filleting knife is made for filleting fish and carving meat. TheĀ overall length is 29 cm. The handle is made from Cherry wood with brass pins.
